A lot of us wake up in the middle of the night from time to time and have a snack of some sort before going back to bed. What's yours?  Mine is peanut butter!

When I say it's peanut butter, that opens up a lot of possibilities. First of all, not all peanut butters are alike. You've got all kinds of brands including Skippy's, Peter Pan, and Jiff to name a few. My favorite is Jif!

That brings us to the next decision. Do you like creamy or crunchy? I prefer the creamy.

Now I've got to decide how to prepare it. Sometimes I just want peanut butter on Saltine crackers, other times on Ritz crackers. Sometimes I want a peanut butter sandwich and sometimes I want it with grape jelly on the sandwich as well. I know that there are many combinations out there such as peanut butter and bananas, which I have heard is awesome, although I have yet to try that combination.

The bottom line is that there are many ways to prepare a peanut butter snack and I like that fact that peanut butter is good for you. Peanuts are rich in protein, fat, and various healthy nutrients. Studies show that peanuts may even be useful for weight loss and are linked to a reduced risk of heart disease. Peanuts are also low in carbs. This makes them a good dietary choice for people with diabetes. Peanuts are an excellent source of many vitamins and minerals  including biotin, copper, niacin, folate, manganese, vitamin E, thiamine, phosphorus, and magnesium.

That makes me feel good that peanuts have so many redeeming qualities and benefits, not to mention that I love the taste of peanut butter!!
